- Como aluno do Coe College, Ellis Verink ganhou prêmios estaduais no basquete em três anos consecutivos. Na atletismo, ele conquistou recordes no salto com vara e salto em altura, competindo em tacadas curtas, disco, salto em largura e obstáculos altos. Ele também teve bom desempenho em futebol e tênis.

O atletismo não era seu único interesse, no entanto. Em seu último ano, ele compilou "Um Relatório Preliminar sobre a Flora do Condado de Linn" a partir de espécimes do herbário da faculdade e da coleção particular de George H. Berry; o relatório foi publicado no Proceedings of the Iowa Academy of Science.

Após a formatura, Verink tornou-se secretário-geral da YMCA em McPherson, Kansas. No McPherson College, ele fez mestrado enquanto lecionava botânica e treinava basquete. Em 1918, o YMCA o enviou a Pequim, para estabelecer a Organização na China. Durante seus seis anos naquele país, ele foi um colaborador frequente da revista National Geographic. Em 1933, ele entrou no negócio de seguros e por duas décadas ocupou uma variedade de cargos de vendas e gerenciamento antes de se aposentar para Lakeland, Flórida, em 1961.  

- As a student at Coe College, Ellis Verink won all-state honors in basketball in three consecutive years. In track, he held records in the pole vault and high jump, competing in short-put, discus, broad jump and high hurdles as well. He also lettered in fotball and tennis.

Athletics was not his sole interest, however. His senior year he compiled "A Preliminary Report on the Flora of Linn County" from specimens in the college herbarium and the private collection of George H. Berry; it was published in the Proceedings of the Iowa Academy of Science. 

After graduation, Verink became general secretary at the YMCA in McPherson, Kansas. At McPherson College he earned a Master's degree while teaching botany and coaching basketball.  In 1918 the YMCA sent him to Beijing, to establish the Organization in China.  During his six years in that nation he was a frequent contributor to National Geographic magazine.  In 1933 he entered the insurance business and for two decades served in a variety of sales and management positions before retiring to Lakeland, Florida in 1961.
